  4. Biryani is a popular South Asian dish that typically consists of layers of spiced rice and meat, seafood, or vegetables. There are many different variations of biryani depending on the region and ingredients used. Here's a basic recipe for making chicken biryani:

  7. 2 lbs chicken, cut into pieces
  8. 1 cup plain yogurt
  9. 1 large onion, chopped
  10. 4 cloves garlic, minced
  11. 1 inch piece of ginger, grated
  12. 2-3 green chilies, chopped
  13. 1 tsp turmeric powder
  14. 1 tsp cumin powder
  15. 1 tsp coriander powder
  16. 1 tsp garam masala powder
  17. 1 tsp chili powder (optional)
  18. Salt, to taste
  19. 2 tbsp ghee or oil
  20. 3-4 cups water
  21. 1/2 cup fresh cilantro, chopped
  22. 1/2 cup fresh mint, chopped
  23. Fried onions for garnish

  25. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.

In a large bowl, mix the yogurt, onion, garlic, ginger, green chilies, turmeric powder, cumin powder, coriander powder, garam masala powder, chili powder (if using), and salt to make a marinade. Add the chicken pieces to the marinade and mix well to coat. Cover and refrigerate for at least 1 hour or overnight.
