- Rinse the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
- In a large bowl, mix the yogurt, onion, garlic, ginger, green chilies, turmeric powder, cumin powder, coriander powder, garam masala powder, chili powder (if using), and salt to make a marinade. Add the chicken pieces to the marinade and mix well to coat. Cover and refrigerate for at least 1 hour or overnight.
- In a large pot or Dutch oven, heat the ghee or oil over medium heat. Add the chicken and marinade and cook for 5-6 minutes, stirring occasionally, until the chicken is browned.
- Drain the soaked rice and add it to the pot with the chicken. Add enough water to cover the rice by about an inch. Add the cilantro and mint and stir gently to combine.
- Bring the water to a boil, then reduce the heat to low and cover the pot tightly with a lid. Cook for 15-20 minutes, or until the rice is tender and the water has been absorbed.
- Remove the pot from the heat and let it sit, covered, for 5-10 minutes.
